Hummus Pasta


This is my go-to quick dinner.  Delicious and nutritious - and so very quick and easy.

1 box whole wheat pasta
veggies (2-4 cups)
1 tub of hummus (8 oz)

Saute your veggies while the pasta cooks.  Then mix, pasta, veggies and hummus and serve.  Really.  That's it. 

I like a veggie heavy dish, so I use a lot, like four cups - but use as much or as little as you want.   Tonight we used asparagus, sundried tomatoes, and spinach.  Other veggies that go well with this dish include artichoke hearts, bell peppers, tomatoes - really just about anything.  If you will be sharing this dish with baby choose your hummus carefully checking for unnecessary ingredients and sodium levels.  That said, the dish is really only as good as the hummus, so either choose a brand you love the flavor of or spice accordingly.  Enjoy!

  1. Great idea!!!! Sounds easy and yummy! Do you let the hummus heat up or just add like pesto sauce?

  2. I just add it like pesto. The heat from the pasta and veggies is enough to heat it up!
