Super-Duper Pancakes


These pancakes are lot of bang for your buck - and Leo gobbles them up.  The recipe is super forgiving, so swap ingredients and see what works for you. 




  • 1  cup  whole wheat flour



  • 2 tablespoons ground flax (or not if you don't have it on hand)



  • 1  teaspoon  baking powder



  • 1/2  teaspoon  baking soda



  • 1/4  teaspoon  salt



  • 1/2 cup breastmilk (or whichever milk your household uses)



  • 1/2 cup unsweetened almond milk (or whichever milk your household uses)



  • 1 mashed banana (or a jar or two of babyfood, if you are trying to get rid of it, like I am...)


    Mix in a bowl and cook in a hot buttered pan until bubbles begin to form.  Flip, cook a few more minutes and done.  

    Super easy, super nutritious, and super convenient - make a bunch of small pancakes and freeze them to thaw out one at a time.  I've added cooked quinoa or barley, used different flours (like chickpea), or used different fruit purees.  It's really a whatever-you-have-on-hand kind of recipe.  Enjoy!
