These pancakes are lot of bang for your buck - and Leo gobbles them up. The recipe is super forgiving, so swap ingredients and see what works for you.
1 cup whole wheat flour
2 tablespoons ground flax (or not if you don't have it on hand)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup breastmilk (or whichever milk your household uses)
1/2 cup unsweetened almond milk (or whichever milk your household uses)
1 mashed banana (or a jar or two of babyfood, if you are trying to get rid of it, like I am...)
Mix in a bowl and cook in a hot buttered pan until bubbles begin to form. Flip, cook a few more minutes and done.
