Pizza Crust Recipe

By request, here is the awesome pizza crust recipe I've been using. (recipe after the jump)




2 1/4 tsp active yeast (one packet, if using packets)
1 cup warm water
1 tsp sugar
1 tsp salt
2 Tablespoons olive oil
~2.5 cup flour (I use one cup of unbleached AP and whole wheat for the rest)

Crumble yeast into warm water, stir until dissolved.

Stir in sugar, salt and olive oil.

Add 2 cups flour and mix well, add remaining flour and knead until smooth and elastic. Should clear sides when mixing, but not bottom of bowl.

Place in greased bowl, brush top lightly with oil and cover and let rise until double in bulk (at least an hour).

Punch down (Leo loves to punch it down) and roll fit pans. I use a 16" pan and I've used the whole batch on one for a doughy crust, or a little more than half for thin and crispy. It could easily make two 12" pies.

Brush with olive oil (optional) and top. I usually just brush the outer crust ring. Red sauce and mozzarella, olive oil with veggies and feta, anything you choose.

We preheat oven to 500 degrees and bake until perfect. usually about 10-15 minutes.
